Jay's Notes

This was the first hot sauce recipe that I made over 25 years ago.  I was drawn in and inspired by the amazing Yellow Devil's Tongue pepper, which a friend was growing and cooking with.  The Devil's Tongue is a Chinese variety originating in Pennsylvania.  I have made many batches of this sauce over the years; dialing in the ingredients, scaling, and sharing with friends.  

I just love the fresh flavors, sharp heat, and endorphin rush that all keep me going back for more.  Eggs and pizza are my favorite applications of this sauce, but it is my most versatile sauce and goes on nearly everything.
