Jay's Notes

Pearfection is the most fun and unique sauce of the bunch.  It is designed around the fruity bite of Coyote Teeth (aka Coyote White Zan) peppers, and layered with ripe Bartlett pears, light amber honey, and fresh ginger.  The sweet start gives way to a delayed heat and lingering sweetness.

My favorite way to eat this sauce is drizzled on a toasted English muffin with a little spread of butter.  I've also taken to using it with other breakfast foods and on peanut butter sandwiches.
